I recently started a new journey… I have done a lot of diets in my life some with great results but always bouncing back and gaining those extra pounds that make my clothes fit tight.
This time I am determined to learn and educate myself on healthy eating and I am loving every day of this adventure trying new food, new recipes and just giving my body what it needs.
So, I got some recipe books and I also look on the internet some days…. Well… I had this for lunch a few days ago and it became one of my favorites… Here is the recipe for it… and I will tell you a secret ingredient I added to it.
1 chicken breast
¼ teaspoon salt
¼ teaspoon pepper
3 teaspoons honey
2 cloves of garlic
2 tablespoons of olive oil
2 celery stalks, sliced
2 carrots, sliced
1 drop of ginger vitality essential oil
In a small bowl, mix together salt, pepper, honey, garlic and ginger essential oil. Pour over chicken and marinate for 10 minutes. In a large skillet, sauté celery and carrots in oil. Cook 5 minutes over medium-high heat. Add chicken mixture. Cook 10 minutes until chicken is tender and no longer pink.
